Make your own sauerkraut


If you love traditional sauerkraut, youíll also love what it can do for you. It contains phytochemicals and other essential nutrients as well as probiotics which greatly help with digestion. But today, there are commercially available sauerkraut products which may taste better, but are definitely not healthier; they usually have too much salt and are pasteurized, meaning all bacteria, including the good probiotic varieties have been eliminated as well. So you would definitely enjoy its healthy benefits if you make your own homemade sauerkraut. Itís easy to prepare and itís cheaper.


  • Organic cabbage (as fresh as possible)
  • Coarse sea salt or pickling salt

  • Shred cabbage and put it in a ceramic crock pot
  • Add salt with a ratio of 9 tbsp salt per 15 lbs. cabbage
  • Mix and let it stand for 1 hour
  • When the cabbage wilts and gives off liquid, compact the shreds below the liquid level using a plate and some weight
  • Cover the container, put it in a cool dry place and let it ferment for 4-6 weeks
